Camillo
I was born and raised in the small Italian village of Miranda (between Naples and Rome). As a young boy I fell in love watching and tasting my grandmother's cooking. Early on I knew my grandmother's combination of Roman and Neopolitan cooking style was unique and wholesome. The taste of her fresh, pure ingredients combined with the right colorful presentation inspired me to become a chef. Camillo was classically trained at the Roccaraso Italian Culinary School as a chef and trained in Italy as a sommelier.
Chef Tortola trained with critically acclaimed Italian Chef, Enzo Ripa, of O-Sole-Mio in Glascow, city center, Scotland. He has been the Owner/Chef/Sommelier of Camillo's Ristorante Italiano in Helensburgh, Scotland and the Owner/Chef of La Bella Italia in Edinburgh, Scotland. In the U.S., Camillo opened Lucca in The North End of Boston, Massachusetts. Chef Tortola was also The Head Chef of Taranta in Boston. He looks forward, with great pleasure in creating an epicurean culinary experience for you here in Princeton at Camillo's Cafe.
